A Beginner's Guide to Gelato Bases: Custard, Milk, and Everything In Between

Ask a new gelato maker what they're working on and you'll usually hear about flavors. Pistachio. Stracciatella. A salted caramel they're trying to get right.

Ask an experienced one the same question and you'll often hear about the base.

That difference is most of the craft. Flavor is what the customer names when they order, but the base is what determines whether that flavor arrives silky or icy, intense or muddled, stable through Thursday or falling apart by Wednesday afternoon. A mediocre base with excellent pistachio paste makes mediocre pistachio gelato. A great base makes a great version of nearly everything you put into it.


There are essentially four families of base, and choosing between them is a real decision with real consequences. Here's what each one does.


The milk base (fior di latte): simple, versatile, classic


This is the foundation of the southern Italian tradition and the base most artisan shops build their menu on.


What's in it: whole milk as the dominant liquid, a modest amount of cream, sugars, milk powder or other milk solids, and usually a small quantity of stabilizer. No eggs.


What it tastes like: milk. That's the point. Fior di latte translates as "flower of the milk," and served on its own it's a genuine test of a gelatiere — there is nothing to hide behind. Clean, sweet, faintly lactic, with a texture that should be almost elastic.


Why it's the workhorse: because it's neutral. A milk base carries whatever you put into it without arguing. Pistachio tastes like pistachio, not like pistachio-and-custard. Lemon stays bright. Chocolate stays clean. For a shop running fifteen flavors off a common base, that neutrality is exactly what you want.


The technical picture: low fat, typically in the 4–8% range, which is why gelato delivers flavor so directly. But low fat also means less structural fat binding water, so the base leans on milk solids-not-fat, sugar composition, and stabilizer to control texture. This is where total solids matter enormously — a milk base that's low in solids will be icy no matter how good your ingredients are. Milk powder is the usual lever for raising solids without raising fat or water.


Where it struggles: it's the least forgiving base you can work with. Small errors in balancing show up immediately, and it has less inherent resistance to heat shock than richer bases. It rewards precision and punishes carelessness.


Use it for: most of your menu. Fruit-adjacent flavors, nut pastes, chocolate, coffee, anything where the added ingredient should be the star.


Egg yolk custard bases: richer, rounder, more complex


The northern Italian tradition, and the closest relative to what most people think of as ice cream custard.


What's in it: milk, cream, sugars, and egg yolks — cooked to form a custard (a crema, or in French technique, a crème anglaise) before churning.


What egg yolks actually do: three separate jobs, and it's worth separating them.

  1. Emulsification. Yolks contain lecithin, a natural emulsifier that helps fat and water coexist stably. This produces a smoother, more homogeneous product and improves the way it melts on the palate.

  2. Water binding. Yolk proteins bind free water, which directly reduces ice crystal growth. This is why a good custard base often holds its texture longer than a lean milk base — it has natural anti-icing built in.

  3. Flavor. Yolks contribute a distinct rich, rounded, faintly savory note. This is the trade-off: it's delicious, and it is not neutral.


Where it excels: flavors that want richness rather than clarity. Vanilla, zabaione, chocolate, caramel, hazelnut, cream-forward classics. A custard base makes a vanilla that tastes like a proper dessert rather than like frozen milk.

Where it gets in the way: delicate and bright flavors. Fresh fruit, citrus, floral notes, and light herbal flavors all get flattened by egg. If you want a lemon that snaps, don't put it in a custard.


The food safety point, which matters: egg-containing bases must be properly pasteurized. Standard artisan practice heats the mix to somewhere between 65°C (low pasteurization) and 85°C (high pasteurization) with appropriate hold time, then cools it rapidly to around 4°C to prevent bacterial growth in the danger zone. Higher pasteurization is commonly used where eggs are involved. Your local food safety authority will have specific requirements for time, temperature, cooling rate, and record-keeping — find out what they are before you build a process, not after an inspection.


A myth worth killing: you'll sometimes hear that real gelato never contains eggs. It's not true. Egg custard bases are thoroughly traditional in Italy; they're simply more associated with the north than the south. Both are authentic.


Cream-based variations: when and why


Not really a separate family so much as a dial you turn — but the decision has consequences worth naming.


What changes: you shift the milk-to-cream ratio toward cream, raising fat content. You can do this with or without eggs.


What you gain:

  • Mouthfeel. Fat coats the palate and reads as luxurious. There's a reason premium ice cream is built this way.

  • Meltdown resistance. Higher-fat product holds its shape longer in the pan and on a warm afternoon — a genuine operational benefit in summer or in an outdoor setting.

  • Forgiveness. Fat binds water and adds structure, so a higher-fat base is more tolerant of imperfect balancing and temperature fluctuation. If you're struggling with consistency, more fat papers over a lot.

  • Carrying capacity for certain flavors. Some aromatics are fat-soluble and genuinely express better with more fat present — vanilla and some spices among them.


What you give up:

  • Flavor intensity. This is the central trade-off. Fat coats the tongue and slows flavor release. Push fat too high and your expensive pistachio starts tasting of cream. You are, in a real sense, moving away from what makes gelato gelato.

  • Cost. Cream is considerably more expensive than milk. On a per-serving basis this adds up fast across a full menu.

  • The category. At a certain point you're no longer making gelato in any meaningful sense. If your fat is running toward ice cream territory, be honest with yourself about what you're producing.


Where it earns its place: specific flavors that genuinely want it — a rich chocolate, a caramel, a cheesecake-style flavor, a vanilla that's meant to be indulgent. Also worth considering for wholesale product that will be transported and stored outside your control, where the extra stability is a real advantage.


The general principle: use cream deliberately, flavor by flavor, rather than raising fat across the board because a batch came out icy. An icy product is usually a solids or sugar-balance problem, and fixing it with cream is expensive and costs you flavor.


Plant-based and dairy-free bases

No longer a niche accommodation. In most markets a well-made dairy-free option is a meaningful share of sales, and it brings in groups who would otherwise go somewhere else entirely — a single vegan or lactose-intolerant person in a party of four often decides where all four people go.

There are two distinct approaches, and confusing them is the most common mistake.


Sorbetto: the traditional route


Water, sugar, fruit, sometimes a stabilizer. No dairy, no substitute for dairy — it's simply a different product, and it has been part of the Italian tradition all along.


Advantages: naturally dairy-free and usually vegan, intensely fruit-forward, comparatively inexpensive, and completely authentic. A good mango or raspberry sorbetto is not a compromise version of anything.


The technical challenge: with no fat and no milk solids, there's very little binding water. Sorbetti are prone to iciness and need careful attention to sugar composition and total solids. PAC targets typically run higher than for gelato — commonly around 280–340 in practitioner references — and this is where sugars like dextrose and trehalose earn their keep, adding solids and freezing point control without excessive sweetness.


Plant-milk bases: building a creamy dairy-free product

Here you're substituting for milk, and each plant milk brings different properties.


Coconut — the highest fat, and the most naturally successful at producing a creamy texture. The catch is that coconut flavor is assertive; it works beautifully in tropical, chocolate, and coffee flavors and fights with delicate ones.


Oat — currently the most popular for good reason. Neutral flavor, natural sweetness, and a body that reads as genuinely creamy. Barista-style formulations tend to have higher fat and perform better. Probably the best general-purpose plant base available.


Cashew and other nut milks — good creaminess and a pleasant richness. Cashew is the most neutral of the nuts. Obvious allergen considerations apply.


Soy — the highest protein content, which helps meaningfully with structure and water binding. Flavor is more noticeable than oat.


Almond, rice, and others — generally lower in fat and protein and harder to build good texture with unless you're supplementing.


The core technical problem: plant milks lack the milk proteins and milk solids-not-fat that do so much structural work in a dairy base. You have to replace that function deliberately — through added fat (coconut oil, cocoa butter, nut pastes), added solids (maltodextrin, dried glucose, nut butters), and typically a somewhat higher stabilizer dose. Simply swapping oat milk for whole milk in a dairy recipe produces a thin, icy product, and it's why most first attempts at vegan gelato disappoint.


Two operational matters worth getting right:


Allergens. Nut-based products introduce serious allergen risk. Separate equipment or rigorous cleaning protocols, clear labeling, and trained staff who can answer accurately are not optional. Follow your jurisdiction's allergen labeling requirements.


Cross-contact. If a customer is avoiding dairy for medical rather than preference reasons, shared spatulas and adjacent pans matter. Decide on your protocol and make sure your staff can describe it honestly.


How the base shapes the finished product


Pulling the threads together — this is the mental model worth carrying.

Fat controls intensity versus richness. More fat means rounder, richer, and more muted. Less fat means sharper, more intense, and more transparent to the ingredient. Every base decision is somewhere on this axis, and there is no universally correct position — only a correct position for a given flavor.


Proteins and solids control texture stability. Milk proteins, egg yolk, and total solids all bind free water. Free water is what becomes large ice crystals. A base high in solids resists iciness and holds up longer in storage; a lean base is more delicate and needs to be sold fresher.


The base sets the flavor floor. A custard base contributes egg and richness to everything you make with it. A milk base contributes clean dairy. A coconut base contributes coconut. There's no such thing as a truly neutral base — only bases whose contribution complements or fights the flavor you're adding.


The base determines your margin for error. Higher-fat, higher-solids bases forgive imprecise balancing and imperfect temperature control. Lean milk bases and sorbetti expose every mistake. If your equipment holds temperature inconsistently or your workflow involves multiple transfers between units, a leaner base will show that damage first.


Process matters as much as formula. Whichever base you choose: pasteurize properly, cool rapidly, and age the mix — commonly four to six hours and often overnight — so proteins and stabilizers hydrate fully and fat crystallizes. Aging is free, it's skipped constantly, and it produces a visible improvement in texture.

Where to start


If you're building a menu from scratch, the practical path is:

  1. Master one milk base first. It's your highest-volume workhorse and the most demanding teacher. Get it silky and stable before you add anything to it.

  2. Add a custard base for the four or five flavors that genuinely want richness.

  3. Keep one sorbetto running permanently. It covers dairy-free demand honestly, it's cheap, and a good fruit sorbetto sells well on its own merits.

  4. Add a plant-milk base when you have capacity to formulate it properly — oat is the sensible starting point. Don't launch a bad one; a disappointing vegan option is worse for your reputation among that audience than not offering one.



The temptation when you're starting out is to chase flavors — to build a menu of twenty interesting things before the underlying product is right.

Resist it. A shop with six flavors on an excellent base outperforms a shop with twenty on a mediocre one, every time. Get the base right and the flavors take care of themselves.
